Real fruit only

Ripe Alphonso or Ataulfo mango blended smooth (or a good unsweetened frozen purée) gives body and true flavour. Taste before adding agave — a ripe mango may need none.

  • 60 ml (2 oz) ripe mango purée Blend fresh ripe mango (or use a good unsweetened frozen purée). Alphonso or Ataulfo mangoes are ideal.
  • 60 ml (2 oz) blanco (silver) tequila 100% agave.
  • 22 ml (3/4 oz) fresh lime juice
  • 15 ml (1/2 oz) orange liqueur (triple sec or Cointreau)
  • 1 tsp agave nectar Only if the mango isn't very sweet — taste first.
