Navy Grog (Three Rums, Citrus & Honey)
The rum-lover's tiki classic: a blend of light, dark and demerara rums with grapefruit, lime and a honey-soda mix over a cone of crushed ice. Bracing, complex and less sweet than most tiki — Don the Beachcomber's connoisseur pour.

Cultural context
Grog began as the British Royal Navy's watered, limed and sugared rum ration, but the tiki Navy Grog is Donn Beach's 1940s Hollywood elaboration: a precise blend of three rums, three citrus and spice, traditionally served over a hand-carved cone of crushed ice made with a special mould (and a straw frozen inside). Drier and more complex than most tiki drinks, it's the one rum obsessives order — Don the Beachcomber's connoisseur pour.

Three rums, three layers
A clean light rum, a funky dark Jamaican, and a rich demerara — each does a different job, and blending them is the whole tiki idea. This is a place to use rums you like.
The ice cone
Traditionally served over a hand-formed cone of crushed ice, sometimes with a straw frozen through it. It’s theatre, but it also chills hard and dilutes slowly.
One of the tiki family
The driest, most spirit-forward member of the tiki family — a bracing counterpoint to the fruity Mai Tai and Hurricane.
Ingredients
- 30 ml (1 oz) light/white rum
- 30 ml (1 oz) dark Jamaican rum
- 30 ml (1 oz) demerara rum The three-rum blend is the whole point — each adds a different layer.
- 22 ml (3/4 oz) fresh lime juice
- 22 ml (3/4 oz) fresh grapefruit juice
- 22 ml (3/4 oz) honey syrup Honey mixed 1:1 with warm water; the classic uses a honey-and-soda 'mix.'
- a mint sprig, to garnish
- crushed ice
Method

-
Shake all three rums, the lime, grapefruit and honey syrup with a little crushed ice for about 5 seconds.
Why: A short shake with crushed ice chills and mixes without over-diluting the rum-forward drink.
-
Pour unstrained into a double old-fashioned glass and top with a mound of fresh crushed ice.
Why: The cone of crushed ice is the Navy Grog's signature; it keeps the drink cold and slowly dilutes it as you sip.
-
Garnish with a mint sprig and serve with a straw.
Why: Mint adds aroma; the straw lets you drink from the bottom, where the flavours concentrate.

Variations
- Ice cone
For the full experience, pack crushed ice around a chopstick in a glass, freeze, remove the chopstick, and pour the drink through the hole.
- Navy strength
Use a higher-proof demerara or overproof rum for a bracing, historically accurate 'navy' kick.
- The tiki family
It's the driest, most rum-forward member — a contrast to the fruity Mai Tai, Hurricane and Piña Colada.
Serving & Storage
A slow sipper for rum lovers. Its dryness suits it as an aperitif or a contemplative nightcap.
Pairs with: Grilled pork, Jerk chicken, Aged cheese, Dark chocolate.
Storage: Make to order; crushed ice and fresh citrus don't keep.

Frequently Asked Questions
Why three different rums?
Each brings a different layer: a light rum for a clean base, a funky dark Jamaican for depth and aroma, and a demerara rum for rich, molasses body. Blending them is the heart of Donn Beach's tiki philosophy — the whole is more complex than any single rum. You can approximate with two if needed, but three is classic.
What's special about the ice?
The Navy Grog is traditionally served over a hand-formed cone of crushed ice, sometimes with a straw frozen through it. It's partly theatre, but the packed crushed ice also chills the drink hard and dilutes it slowly as you sip, which suits this strong, rum-forward cocktail.
Is it very sweet?
No — that's the point. The Navy Grog is one of the drier, more spirit-forward tiki classics, balanced by tart grapefruit and lime with just enough honey. It's the tiki drink for people who think tiki is too sweet.
