The Tiki Drinks

Tiki isn’t a place, it’s a fantasy in a glass: layered rums, fresh fruit and citrus, crushed ice and a garnish that means business.

The formula

One or more rums + tropical fruit + citrus + a sweet syrup (orgeat, falernum, grenadine), over crushed ice with a lavish garnish.

Born in 1930s California bars like Don the Beachcomber and Trader Vic’s, tiki is the art of hiding serious rum inside a lush, fruity, endlessly garnished drink. The template is loose but recognisable: one or more rums as the base, bright citrus, a tropical fruit or juice, and a distinctive sweet syrup — orgeat (almond), falernum (spiced lime), or grenadine — all poured over mounds of crushed ice. Half the fun is the mint, the pineapple wedge, the paper umbrella and the occasional flame.
